sweet memories of rock cakes

A few weeks ago the lovely Tammi from little poppa blog posted a recipe - old fashioned rock cakes. I had totally forgotten about these yummy little treats for years and years... that post time warped me back to when my mum use to make them when we were little... so I just had to make some!!! They are so easy to make too! I changed the recipe slightly because I'm lactose intolerant and I also added cinnamon.

Rock cakes
100g margarine (or butter)
2 cups of flour
2 tsp baking powder
1/2 tsp cinnamon
1 cup sultanas
1/2 cup sugar
2 beaten eggs
2 tbs of soy milk (or milk)

Sift flour and baking powder into bowl, rub in margarine - then add sultanas and cinnamon

Mix together beaten eggs, sugar and soy milk - then add and mix with dry ingredients

Spoon two teaspoon size blobs (a very technical term there) on to greased tray with baking paper

Place in preheated oven of 200°C for 15 minutes and then Voila!!!

note: my mum would sprinkle a little bit of sugar on top before she put them in the oven - I forgot to do it for this batch!

I just can't get over how easy and yummy this recipe is... especially as I'm not the best cook in the world! It can be hard when you have an allergy and you have substitute (like this one) ... some recipes work great but sometimes it just doesn't work! I'm glad this recipe worked out though my waistline is probably not very happy with me today... whoops :)

    Jez has been hassling for sme hedgehog slice as well, so it's going to be a calorific extravaganza this weekend!

  3. Ha ha ha Cindy... YUM hedgehog slice!!! I think I've actually OD-ed on the rock cakes.. they were so moorish I just couldn't stop! Hope you don't OD :)
